Grilled Southwestern Potato Salad



This Grilled Southwestern Potato Salad is a tasty take on traditional potato salad. It has smoky grilled potatoes, a rainbow of vegetables, and a spicy chipotle dressing.

Ingredients:

  • 4 large potatoes, diced
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 red bell pepper, diced
  • 1 cup corn kernels
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely chopped
  • Juice of 1 lime
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon adobo sauce from canned chipotle peppers
  • Grated cheddar cheese for garnish
  • Green onions for garnish

Instructions:

Warm up the grill over medium-high heat

Add the diced potatoes to a large bowl

Add the cumin, chili powder, smoked paprika, salt, and pepper

Toss the potatoes so that they are evenly covered

Put the seasoned potatoes on the grill and cook, turning them over every so often, for about 15 to 20 minutes, or until they are soft and have grill marks

Put corn, black beans, red onion, cilantro, and red bell pepper in a different bowl

To make the dressing, mix the lime juice, mayonnaise, sour cream, and adobo sauce in a small bowl with a whisk

After grilling the potatoes, add them to the bowl with the other vegetables

Pour the dressing over the vegetables and potatoes, and gently toss to mix

Add green onions and grated cheddar cheese as a garnish

You can serve the Grilled Southwestern Potato Salad cold or warm
