A healthy and refreshing stir fry with juicy shrimp, crunchy asparagus, and fluffy quinoa tossed in a tangy lemon sauce. It doesn't take long to make this dish, and it tastes great.
Ingredients:
- 1 cup quinoa, rinsed and cooked
- 1 lb shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into bite-sized pieces
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 2 tablespoons soy sauce
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon honey
- Salt and pepper to taste
- 2 green onions, sliced for garnish
Instructions:
Warm up the olive oil in a big pan over medium-high heat
It will take about two to three minutes on each side for the shrimp to turn pink after you add them
Take the shrimp out of the pan and set it aside
Put asparagus and minced garlic in the same pan
This will take about 34 minutes, or until the asparagus is soft but still crisp
Add the cooked quinoa and stir it in
Then add the cooked shrimp back to the pan
Mix honey, soy sauce, lemon zest, lemon juice, salt, and pepper in a small bowl with a whisk
Cover the shrimp, asparagus, and quinoa with the sauce
Mix everything together and heat it all the way through
Serve the stir-fry with green onions that have been sliced on top
