Easy Coleslaw



This simple coleslaw recipe is a classic side dish that goes well with any keto-friendly main dish. This coleslaw is easy to make and tastes great. It has Dijon mustard, creamy mayonnaise, tangy apple cider vinegar, and shreds of cabbage. Erythritol gives it a little sweetness, but you can leave it out if you'd rather. This crunchy and cool coleslaw is great as a side dish or on top of your favorite burgers or sandwiches.

Ingredients:

  • 4 cups shredded cabbage
  • 1/4 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp granulated erythritol optional
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the shredded cabbage, mayonnaise, apple cider vinegar, Dijon mustard, and granulated erythritol if using

Season with salt and pepper to taste

Toss until the cabbage is evenly coated with the dressing

Refrigerate for at least 30 minutes before serving to allow the flavors to meld together

Serve chilled and enjoy!
