Samoa Fudge Bombs



Like the classic Girl Scout cookie, these Samoa Fudge Bombs are a tasty and easy-to-make keto treat. People on a low-carb or keto diet can enjoy these treats without feeling bad because they are full of coconut flavor and taste like rich chocolate.

Ingredients:

  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons powdered erythritol or preferred keto-friendly sweetener
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 2 oz dark chocolate 85% or higher, chopped optional, for coating

Instructions:

In a mixing bowl, combine the shredded coconut, almond flour, melted coconut oil, cocoa powder, powdered erythritol, vanilla extract, and a pinch of salt

Mix well until a dough-like consistency forms

Form the mixture into small balls about 1 tablespoon each and place them on a parchment-lined baking sheet

Optional: Melt the dark chocolate in a microwave or over a double boiler

Dip each fudge bomb into the melted chocolate to coat, then return to the baking sheet

Place the baking sheet in the refrigerator for about 30 minutes, or until the fudge bombs are firm

Serve and enjoy! Store any leftovers in an airtight container in the refrigerator
