Herb-Crusted Lamb with Roasted Vegetables

This dish pairs perfectly with the 2014 Chateau de Lascaux AOC Languedoc. The herb-crusted lamb brings out the wine's bold flavors, while the roasted vegetables complement its earthy undertones.

Ingredients:

  • 4 lamb chops
  • 1 cup breadcrumbs
  • 2 tbsp chopped fresh rosemary
  • 2 tbsp chopped fresh thyme
  • 2 tbsp chopped fresh parsley
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Assorted vegetables for roasting such as carrots, potatoes, and onions

Instructions:

Get the oven ready by heating it up to 400F 200C

Put breadcrumbs, garlic, salt, and pepper in a bowl

Add rosemary, thyme, parsley, and rosemary

Spread the breadcrumb mixture over the lamb chops and gently press it on to stick

In a pan, heat the olive oil over medium-high heat

Grill the lamb chops for two to three minutes on each side, or until they turn golden brown

Put the lamb chops in a baking dish

Set up the vegetables around them

Roast in an oven that has been heated up for 20 to 25 minutes, or until the vegetables are soft and the lamb is cooked to your liking

Enjoy while hot!
